  • 2 medium zucchini
  • 1 tsp dried oregano
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella
  • 1 cup marinara sauce
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 190C (375F) and lightly grease a baking dish.
  2. Arrange sliced zucchini in a single layer in the baking dish; sprinkle with oregano.
  3. Spread half of the ricotta cheese over the zucchini, then add half of the marinara sauce.
  4. Repeat layers with remaining zucchini, ricotta, and marinara sauce.
  5. Top with shredded mozzarella cheese.
  6. Cover with aluminum foil and bake for 25-30 minutes, then uncover and bake for an additional 10-15 minutes until golden and bubbly.
  7. Let cool slightly before serving; garnish with fresh basil.
