  • Salt & pepper
  • 1 cup cooked wild rice blend
  • 1 cup broccoli florets
  • 1 cup sliced red bell pepper
  • 1 cup sliced yellow bell pepper
  • 1 cup sugar snap peas
  • 1 cup trimmed green beans
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 3 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp rice vinegar
  • 2 tbsp water

Instructions

  1. Marinate the chicken: Mix chicken pieces with soy sauce, cornstarch, sesame oil, salt, and pepper. Let it marinate for 10 minutes.
  2. Prepare the sauce: In a small bowl, whisk together soy sauce, honey or maple syrup, rice vinegar, and water until well combined.
  3. Cook the chicken: Heat vegetable oil in a wok over medium-high heat. Cook the marinated chicken for about 5-7 minutes until browned. Set aside.
  4. Sauté vegetables: In the same wok, sauté minced garlic and grated ginger for 30 seconds. Add all vegetables and stir-fry for 3-4 minutes until crisp yet tender.
  5. Combine ingredients: Return the chicken to the wok with cooked wild rice and sauce. Toss everything together until heated through.
