  • 3 ancho peppers
  • 3 pasilla peppers
  • 2.5 pounds beef chuck
  • 2 tablespoons olive oil
  • 1 medium white onion
  • 3 jalapeno peppers
  • 4 cloves garlic
  • 2 cups beef stock
  • 1 tablespoon brown sugar
  • 2 tablespoons masa harina

Instructions

  1. Toast dried peppers in a dry pan for about 1-2 minutes per side until fragrant.
  2. Remove stems and seeds from cooled peppers, then soak them in hot water for 20 minutes.
  3. Blend soaked peppers with soaking water and salt until smooth; set aside.
  4. Toss cubed beef with cumin, salt, and pepper in a bowl until well-coated.
  5. In a large pot, heat olive oil and sear seasoned beef until browned; remove from pot.
  6. Add chopped onions and jalapenos to the pot; cook until softened.
  7. Stir in garlic and cook for an additional minute.
  8. Return seared beef to the pot; add chili paste and simmer briefly.
  9. Pour in beef stock, water, brown sugar, and masa harina; bring to boil.
  10. Reduce heat, cover, and simmer for about 2 hours until beef is tender.
