Ingredients

  • 3 cups ripe Roma tomatoes
  • ½ English cucumber
  • 1 small onion
  • 1 red bell pepper
  • 4 tablespoons extra virgin olive oil
  • 4 teaspoons apple juice vinegar
  • 1 slice stale white bread
  • 1 clove garlic
  • Salt and pepper to taste

Instructions

  1. Soak the slice of stale bread in water until softened.
  2. Wash and roughly chop the tomatoes, cucumber, onion, and red bell pepper.
  3. In a blender or food processor, combine chopped vegetables, garlic, salt, pepper, smoked paprika, and cumin.
  4. Squeeze excess water from the soaked bread and add it to the blender along with olive oil and apple juice vinegar.
  5. Blend until smooth; adjust thickness with water or more bread if needed.
  6. Taste and adjust seasoning. Chill in the refrigerator for at least 1-2 hours before serving.
