  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1 (8.5 oz) box corn muffin mix
  • 1 large egg
  • 1/3 cup milk
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, brown the ground beef over medium heat. Add onions and garlic; sauté until translucent.
  3. Stir in corn, black beans, diced tomatoes, chili powder, cumin, and salt. Simmer for 5 minutes.
  4. In a bowl, mix cornbread mix, egg, and milk until just combined.
  5. Pour beef mixture into a greased baking dish; spread cornbread batter on top.
  6. Bake for 25-30 minutes until golden brown.
  7. Sprinkle cheese on top; return to oven for an additional 3-5 minutes until melted.
