  • 1 3/4 cups all-purpose flour

  • 1 teaspoon pumpkin pie spice
  • 2 teaspoons cornstarch
  • 1/4 teaspoon salt
  • 1 cup vegan butter, softened (for frosting)
  • 3 teaspoons vanilla paste (or extract)
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice (or cinnamon)
  • 1/3 cup brown sugar
  • 3 1/4 cups powdered sugar

Instructions

  1. In a bowl, cream together softened vegan butter, pumpkin puree, brown sugar, granulated sugar, and vanilla until light and fluffy.
  2. In another bowl, whisk all-purpose flour, baking powder, pumpkin pie spice, cornstarch, and salt.
  3. Gradually add dry ingredients to the wet mixture and mix until just combined.
  4. Chill dough for at least 30 minutes.
  5. Preheat oven to 350°F (177°C) and shape chilled dough into 2-inch balls on a lined baking sheet.
  6. Bake for 10–12 minutes; cool completely before frosting.
  7. For frosting, whip together remaining vegan butter, vanilla paste, cinnamon, pumpkin pie spice, brown sugar, and powdered sugar until smooth. Pipe onto cooled cookies.
