  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 tablespoon pumpkin pie spice
  • 1/4 tsp black pepper
  • 8 Tbs butter (room temperature)
  • 1 cup brown sugar (packed)
  • 1/4 cup molasses
  • 2/3 cup pumpkin puree
  • 1 large egg
  • 1/2 cup sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, pumpkin pie spice, and black pepper; set aside.
  3. In a stand mixer or using a hand mixer, beat butter until creamy. Add brown sugar, molasses, and pumpkin puree; mix well.
  4. Incorporate the egg into the wet mixture and beat until combined.
  5. Gradually add the dry ingredients to the wet mixture; mix until just combined.
  6. Chill dough in plastic wrap for at least 30 minutes.
  7. Roll chilled dough into balls and coat with sugar before placing on baking sheets.
  8. Flatten each ball slightly and bake for 12-14 minutes until set.
  9. Cool on baking sheets for a few minutes before transferring to a wire rack.
