Ingredients

  • 1 salmon fillet
  • 1 tsp soy sauce
  • 1 tsp honey or maple syrup
  • 1 tsp sesame oil
  • 1 tsp rice vinegar (optional)
  • 1 tsp black sesame seeds
  • Salt & pepper to taste
  • 1 medium sweet potato, peeled and sliced into wedges
  • 1 tsp olive oil
  • 1 tsp paprika
  • 1 cup broccoli florets
  • Pinch of salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss sweet potato wedges with olive oil, paprika, salt, and pepper. Spread on a baking tray and roast for 25-30 minutes until crispy.
  3. Mix soy sauce, honey or maple syrup, sesame oil, and rice vinegar (if using). Place the salmon on a baking tray, brush with the glaze, sprinkle with black sesame seeds, and bake for 12-15 minutes.
  4. Steam broccoli florets in a steamer basket for about 4-5 minutes until bright green and tender.
  5. Plate the salmon alongside sweet potato wedges and steamed broccoli. Drizzle any extra glaze over before serving.
