  • 2 slices whole grain or sourdough bread
  • 2 soft-boiled eggs
  • 1 cup fresh spinach
  • 45 cremini mushrooms, sliced
  • 1 tbsp cream cheese or cashew spread
  • Olive oil or butter
  • 2 slices fresh tomato
  • Salt and freshly ground black pepper

Instructions

  1. Boil the eggs in water for about 7 minutes. Transfer them to an ice bath once done, then peel and halve.
  2. In a skillet, heat olive oil over medium heat and sauté sliced mushrooms until golden brown. Add spinach and wilt.
