  • 4 tablespoons olive oil (2 for roasting, 2 for vinaigrette)

  • 1 tablespoon Dijon mustard
  • 2 tablespoons red apple vinegar
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. On a baking sheet, toss asparagus and halved radishes with 2 tablespoons olive oil, salt, and pepper.
  3. Roast for 20–25 minutes until tender and lightly browned, turning halfway through.
  4. In a mixing bowl, whisk together whole grain mustard, Dijon mustard, red apple vinegar, minced garlic, remaining olive oil, and seasoning.
