  • 2 chicken breasts
  • 2 medium sweet potatoes
  • 1 ripe avocado
  • 150g cherry tomatoes
  • Red onion
  • 4 tbsp plain Greek yogurt
  • 1 tbsp olive oil
  • Juice of 2 limes
  • Juice of 1 lemon
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 200C (400F).
  2. Toss sweet potato wedges with olive oil, cumin, paprika, salt, and pepper. Spread on a baking sheet and roast for 25 minutes.
  3. Season chicken strips with olive oil, lime juice, spices, salt, and pepper. Grill over medium-high heat for 5-6 minutes per side until cooked through.
  4. In a bowl, combine diced avocado, halved cherry tomatoes, chopped red onion, cilantro, lime juice, salt, and pepper to make the salsa.
  5. Mix Greek yogurt with lemon juice and fresh herbs for the dip.
  6. Assemble by placing grilled chicken, roasted sweet potatoes, avocado salsa, and yogurt dip in a bowl.
