  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup milk chocolate chips
  • 1/2 cup all-purpose flour (for cookies)
  • 1 tsp cornstarch (for cookies)
  • 1/2 tsp baking soda
  • 1/8 tsp baking powder
  • 1/4 tsp salt (for cookies)
  • 1/4 cup unsalted butter (room temperature)
  • 1/3 cup brown sugar (packed light or dark)
  • 1/8 cup granulated sugar (for cookies)
  • 1/4 cup peanut butter (creamy)
  • 1 tsp vanilla extract (for cookies)
  • 1 large egg (room temperature)
  • 1/2 cup quick oats
  • 1/2 cup mini chocolate chips
  • 1/2 cup mini M&Ms

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine granulated sugar, eggs, melted butter, oil, and vanilla; whisk until smooth.
  3. In another bowl, mix flour, cocoa powder, cornstarch, and salt; gradually add to the wet ingredients.
  4. Fold in chocolate chips and pour the batter into a greased 9×13 inch baking pan. Bake for about 20 minutes.
  5. For the monster cookies, mix flour, cornstarch, baking soda, salt, butter, brown sugar, white sugar, peanut butter, vanilla extract, egg, oats, chocolate chips, and M&Ms until well combined.
  6. Spoon the cookie mixture over the brownie batter and spread gently.
  7. Bake for an additional 20 minutes until golden brown on top.
  8. Allow to cool completely before cutting into bars.
