  • One 15.5-ounce can black beans, rinsed and drained
  • ¾ cup seeded and chopped tomato
  • ¾ cup peeled and chopped jicama
  • ¾ cup fresh corn kernels
  • ¾ cup thinly sliced radishes
  • 1 large avocado, diced
  • 1 large red bell pepper, chopped
  • ¼ cup reduced-fat crumbled feta cheese (optional)
  • ¼ cup freshly squeezed lime juice
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons honey
  • 2 tablespoons finely chopped fresh cilantro
  • 1 medium garlic clove, minced
  • 1 teaspoon finely chopped fresh jalapeño

Instructions

  1. Wash and chop the romaine lettuce into bite-sized pieces. Rinse and drain the black beans.
  2. In a large mixing bowl, combine chopped romaine, black beans, tomato, jicama, corn kernels, radishes, diced avocado, red bell pepper, and crumbled feta cheese if desired.
  3. In a separate bowl, whisk together lime juice, olive oil, honey, cilantro, minced garlic, and jalapeño until well combined.
  4. Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly.
  5. Serve immediately for the best flavor and texture.
