  • 1 pound ground beef
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 bell pepper (diced (any color))
  • 1 jalapeño (seeded and finely chopped (optional for extra heat))
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 can (14.5 ounces diced tomatoes, undrained)
  • 4 cups beef broth
  • 1 cup water
  • 1/2 cup long-grain white rice
  • 1 can (15 ounces black beans, drained and rinsed)
  • 1 cup frozen corn
  • Salt and pepper (to taste)
  • Juice of 1 lime
  • 1/4 cup chopped fresh cilantro
  • Shredded cheese
  • Sour cream
  • Sliced avocado
  • Tortilla strips or chips
  • Extra lime wedges

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Brown the ground beef, breaking it up as it cooks. Drain excess fat.
  2. Add diced onion, bell pepper, and jalapeño (if using) to the pot; sauté for 5 minutes until softened. Stir in minced garlic and cook for an additional 1–2 minutes.
  3. Mix in cumin, chili powder, smoked paprika, and oregano; cook for 1 minute to toast the spices. Add diced tomatoes (with juice) and stir well.
  4. Pour in beef broth and water; bring to a boil. Stir in rice, reduce heat to low, and simmer for about 15 minutes until rice is tender.
  5. Stir in black beans and frozen corn; simmer for another 5 minutes.
  6. Season with salt and pepper to taste; stir in lime juice and cilantro before serving.
  7. Serve hot with desired toppings like shredded cheese, sour cream, avocado slices, tortilla strips, or lime wedges.
