Ingredients

Scale
  • 1 lb carrots, peeled and cut into sticks or left whole if small
  • 2 tablespoons olive oil
  • 1 ½ tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon balsamic vinegar
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried thyme or 1 teaspoon fresh thyme
  • ¼ teaspoon red pepper flakes (optional for heat)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or grease it lightly.
  2. If using large carrots, peel and cut them into even-sized sticks for quicker cooking; baby carrots can be left whole.
  3. In a small bowl, whisk together olive oil, maple syrup, Dijon mustard, balsamic vinegar, garlic powder, salt, black pepper, thyme, and red pepper flakes until smooth.
  4. Place the carrots in a mixing bowl and pour the glaze over them; toss well to coat evenly.
  5. Spread the coated carrots on the prepared baking sheet in a single layer.
  6. Roast for 20-25 minutes, flipping halfway through until tender and slightly caramelized. For a deeper golden color, roast for an additional 5 minutes.
  7. Garnish with chopped fresh parsley or nuts before serving.
