  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, mix together 1 ½ cups flour, ½ cup sugar, ½ teaspoon baking powder, melted butter, and salt until crumbly.
  2. Reserve ½ cup of the mixture for topping. Press the remaining mixture firmly into an 8×8-inch baking pan lined with parchment paper. Bake for about 12-15 minutes until lightly golden.
  3. In another bowl, whisk together 2 eggs, 1 cup sugar, ¼ cup flour, lemon juice, and lemon zest until smooth.
  4. Pour the lemon mixture over the baked crust and sprinkle with the reserved crumb mixture.
  5. Bake for an additional 20-25 minutes or until the filling is set and lightly golden.
  6. Allow to cool completely in the pan before chilling in the refrigerator for at least one hour before slicing into squares.
