  • 1 salmon fillet (120-150g)
  • 1 tsp honey
  • 1 tsp soy sauce or tamari
  • 1 tsp olive oil
  • 1 cup cooked basmati rice
  • 1 avocado, sliced
  • 1 cup cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 tbsp chopped fresh mint
  • 1 tbsp chopped parsley
  • 1 tsp olive oil
  • Squeeze of lemon juice
  • Salt & pepper to taste

Instructions

  1. Marinate the salmon by combining honey, soy sauce (or tamari), and olive oil in a bowl. Coat the salmon fillet and let it sit for 10 minutes.
  2. Heat a skillet over medium-high heat and cook the marinated salmon for about 3-4 minutes on each side until caramelized and cooked through.
  3. In another bowl, mix cherry tomatoes with chopped mint, parsley, olive oil, lemon juice, salt, and pepper to make the salad.
  4. To assemble the bowl: layer cooked basmati rice at the bottom, followed by the salmon fillet, sliced avocado, cucumber slices, and tomato herb salad on top.
