  • 2 chicken breasts, cubed
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • Salt and pepper
  • 1 cup butternut squash, cubed
  • 1 cup cooked white rice
  • 1 cup steamed broccoli florets
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Toss cubed butternut squash with olive oil, salt, pepper, and optional cinnamon. Spread on a baking sheet in a single layer and roast for 25-30 minutes until golden brown and tender.
  2. In a skillet over medium heat, add olive oil. Once hot, add the cubed chicken and cook until golden brown on all sides. Stir in minced garlic, honey, soy sauce, paprika, salt, and pepper. Let simmer until the chicken is fully glazed.
  3. Steam broccoli florets using a steamer basket or pot for about 3-4 minutes until bright green and tender.
  4. Assemble your bowl by layering cooked rice at the bottom. Add roasted butternut squash on one side and steamed broccoli on another side. Top with honey garlic chicken and garnish with fresh parsley.
