  • 10 Balls fresh mozzarella (bocconcini, ciliegine, “cherry sized”)
  • 5 black olives (whole pitted, medium or large)
  • ½ Pound chicken (sliced thinly)
  • ¼ Cup olive oil
  • 8 basil leaves (fresh)
  • 1 ½ Ounces balsamic glaze
  • 8 ½ Ounces sun dried tomatoes (packed in oil, julienne cut)
  • kosher or table salt (as needed)
  • flake salt (as needed)

Instructions

  1. Prepare the dressing by mixing olive oil and chopped basil in a bowl; season with salt.
  2. Slice mozzarella balls in half and place one half on a serving platter as the base.
  3. Top with a folded slice of chicken and place a whole black olive on top to create the 'eyeball.'
  4. Drizzle balsamic glaze over each appetizer and scatter sun-dried tomatoes around for decoration.
  5. Chill for 10 minutes before serving.
