  1. Slice the zucchinis lengthwise into thin strips (about 1/4 inch thick).
  2. Brush each zucchini strip lightly with olive oil and sprinkle with salt.
  3. Preheat your grill to medium-high heat and grill the zucchini strips for 3-4 minutes per side until tender.
  4. In a mixing bowl, combine ricotta cheese, lemon juice, and chopped basil; mix well.
  5. Once cooled, place a spoonful of ricotta at one end of each zucchini strip and roll up gently.
