  • 12 tostada shells
  • 1 ½ lb raw peeled shrimp
  • 2 avocados (mashed)
  • 34 tomatoes (seeded and diced)
  • 1 jalapeño pepper (minced)
  • juice from 1 lime
  • 1/2 small bunch cilantro (minced)
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • cooking spray

Instructions

  1. Prepare the shrimp marinade by mixing chili powder, cumin, oregano, garlic powder, onion powder, salt, black pepper, and olive oil in a bowl. Toss the shrimp in the mixture and let them marinate for 15 minutes.
  2. In another bowl, combine mashed avocados with minced cilantro, garlic, lime juice, salt, and pepper to make guacamole.
  3. For the pico de gallo, mix diced tomatoes, minced garlic, jalapeño pepper, red onion, and cilantro in a separate bowl.
  4. Preheat a grill pan or skillet over medium heat and lightly coat with cooking spray. Cook marinated shrimp for about 1-2 minutes per side until opaque.
  5. Assemble tostadas by layering guacamole on each shell followed by grilled shrimp and pico de gallo.
