  • 1 salmon fillet (~150g)
  • 1 cup cooked quinoa
  • 1 cup broccoli florets
  • Cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1 tsp olive oil
  • Salt, black pepper, garlic powder to taste

Instructions

  1. Rinse 1 cup of dry quinoa under cold water. In a pot, combine with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes until fluffy.
  2. Season the salmon fillet with salt, black pepper, and garlic powder on both sides. Heat 1 teaspoon of olive oil in a non-stick skillet over medium heat. Cook the salmon for about 4-5 minutes on each side until golden brown.
  3. Fill a pot with water and bring it to a simmer. Place broccoli florets in a steamer basket above the pot and steam for about 4-5 minutes until vibrant green.
  4. On a plate, arrange cooked quinoa as the base, top with seared salmon, and add steamed broccoli alongside cucumber slices and halved cherry tomatoes.
