  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup chopped fresh cilantro
  • 1 cup lettuce or mixed greens (optional)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp lemon juice
  • 2 tbsp olive oil (for dressing)
  • 1 tbsp fresh lime juice (for dressing)
  • 1 tsp honey (for dressing)
  • 1 tsp Dijon mustard (for dressing)
  • Salt & pepper to taste (for dressing)

Instructions

  1. Prep the chicken by rubbing it with olive oil, lemon juice, garlic powder, paprika, salt, and black pepper.
  2. Grill the chicken over medium heat for 5-6 minutes per side until it reaches an internal temperature of 165°F (75°C). Allow it to rest before slicing.
  3. In a mixing bowl, whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper for the dressing.
  4. In a large bowl, combine diced avocado, halved cherry tomatoes, chopped cilantro, and greens if using. Toss gently.
  5. Top the salad with sliced grilled chicken and drizzle with dressing just before serving.
