  • 11 oz dried ribbon noodles
  • 1½ tablespoons cooking oil
  • ½ cup scallions (white part only)
  • 1½ tablespoons minced garlic
  • ¼ cup low-sodium vegetable broth
  • 2 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon Chinese black vinegar
  • 1 tablespoon Korean chili powder or flakes

Instructions

  1. Heat the cooking oil in a frying pan over low heat. Add the white part of the scallions and minced garlic; sauté for about 5 minutes.
  2. Increase heat to medium-low, then stir in vegetable broth, light soy sauce, dark soy sauce, Chinese black vinegar, and Korean chili flakes. Simmer for 5 minutes.
  3. Cook the noodles in a large pot of boiling water according to package instructions; drain once cooked.
  4. Add the drained noodles to the pan with the sauce and toss well to combine thoroughly.
