  • 2 1/2 cups cake flour
  • 2 Tbsp unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp fine salt
  • 1/2 cup unsalted butter, room temperature
  • 1 3/4 cups granulated sugar
  • 2 large eggs, room temperature
  • 1 1/4 cups buttermilk, room temperature
  • 2/3 cup vegetable or canola oil
  • 2 squirts of green gel food coloring
  • 2 tsp vanilla extract
  • 1 tsp white vinegar
  • 1 1/2 cups unsalted butter, room temperature (for frosting)
  • 1/2 cup full-fat cream cheese, room temperature
  • 1 Tbsp vanilla extract
  • 1 tsp fine salt
  • 8 cups powdered sugar
  • 2 Tbsp heavy whipping cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two round cake pans.
  2. In a large bowl, sift together the cake flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
  4. Add in eggs one at a time, mixing well after each addition.
  5. Mix in buttermilk and oil until fully combined.
  6. Stir in green gel food coloring until desired color is achieved.
  7. Finally, add vanilla extract and vinegar.
  8. Combine dry ingredients into wet ingredients gradually until just mixed well.
  9. Divide batter evenly between prepared pans. Bake for about 28 minutes or until a toothpick comes out clean. Let cakes cool completely in pans before transferring to wire racks.
  10. In a mixing bowl, beat together softened butter and cream cheese until smooth.
  11. Gradually add powdered sugar while beating on low speed until well blended.
  12. Add salt and heavy whipping cream to achieve desired consistency.
  13. Once cakes are completely cool, place one layer on a greaseproof board or plate.
  14. Spread a layer of buttercream on top.
  15. Add second layer on top and frost entire cake with remaining buttercream.
  16. Use colored gels to create fun designs.
