  • 2 teaspoons instant dry yeast
  • 2 teaspoons sugar
  • 4 cups all-purpose flour (or bread flour)
  • 3 teaspoons salt
  • 4 tablespoons extra virgin olive oil (divided)
  • Optional: rosemary and flaky salt for topping

Instructions

  1. Bloom the yeast: Combine lukewarm water, instant dry yeast, and sugar in a small bowl; let sit until dissolved.
  2. Make the dough: In a mixing bowl, combine flour and salt. Add the yeast mixture and stir until wet and sticky. Incorporate 2 tablespoons olive oil.
  3. Proof the dough: Cover the bowl with plastic wrap; choose either quick proofing in a warm oven (1.5 to 2 hours) or slow proofing in the refrigerator (8 to 24 hours).
  4. Fold the dough: Once risen, gently fold it over itself in the bowl about 20 to 40 times.
  5. Final proofing: Grease a baking pan with olive oil, transfer the dough into it, spread it out gently, cover again, and let rise for another 45 minutes while preheating the oven to 450°F (230°C).
  6. Add toppings: Mix remaining olive oil with water and salt; press dimples into the dough and pour over the mixture. Optionally sprinkle with rosemary and flaky salt.
  7. Bake: Place in the oven and bake for 20 to 25 minutes until golden brown.
