  • 2 teaspoons curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground cumin
  • ¼ teaspoon red pepper flakes (more or less to taste)
  • 5 cups vegetable broth (or more if needed)
  • 1 can (15 ounces) crushed tomatoes
  • 1 cup dried lentils (green or brown)
  • 1 pound potatoes (peeled and cut into bite-size chunks)
  • 5 ounces kale (or spinach, chopped)
  • 1 teaspoon salt (or more to taste)
  • ⅛ teaspoon black pepper
  • 4 wedges lime

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and carrots; sauté until softened.
  2. Stir in grated garlic, ginger, curry powder, turmeric, cumin, and red pepper flakes; cook for another minute.
  3. Add vegetable broth, crushed tomatoes, lentils, diced potatoes, kale, salt, and black pepper. Bring to a gentle boil.
  4. Reduce heat to low, cover, and let simmer for about 30 minutes until lentils are tender.
  5. Adjust seasoning as needed before serving with lime wedges.
