  • ½ cup flour
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 eggs
  • 2 tablespoons water (or milk)
  • ⅔ cup shredded sweetened coconut flakes
  • ⅔ cup panko bread crumbs
  • Oil for frying (or baking)

Instructions

  1. Prepare your breading station by setting up four shallow bowls: mix flour, chili powder, salt, and pepper in the first; whisk eggs and water (or milk) in the second; fill the third with coconut flakes; and place panko bread crumbs in the fourth.
  2. Coat each chicken tender by tossing it in the flour mixture, dipping it into the egg wash, rolling it in coconut, and finally coating it with panko.
  3. For frying, heat about 1 inch of oil in a skillet over medium heat until hot. Fry tenders in batches for about 3-4 minutes on each side until golden brown and cooked through. If baking, preheat oven to 400°F (200°C) and bake for 20-25 minutes.
  4. Transfer cooked tenders to a wire rack over paper towels to drain excess oil. Serve warm with sweet chili sauce.
