  • 4 thin boneless, skinless chicken breasts (or 2 thick ones, halved)
  • 1 cup flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 teaspoons Italian seasoning
  • 2 tablespoons olive oil
  • 12 oz spaghetti
  • 4 tablespoons butter
  • 1 small yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 small tomatoes, diced
  • 1 tablespoon flour
  • 1 cup heavy cream
  • 1 cup white grape juice
  • ½ cup shredded Parmesan
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon crushed red pepper flakes

Instructions

  1. Prep the chicken by coating it with flour mixed with salt, pepper, garlic powder, and Italian seasoning.
  2. Heat olive oil in a skillet over medium-high heat, then sear the chicken until golden brown on both sides and cooked through. Remove and set aside.
  3. In the same skillet, melt butter and sauté chopped onion and minced garlic until fragrant. Add diced tomatoes and flour; mix well.
  4. Gradually stir in heavy cream and white grape juice, seasoning with Italian herbs, salt, and crushed red pepper flakes. Simmer until thickened.
  5. Cook spaghetti according to package instructions until al dente; drain.
  6. Toss cooked pasta in the creamy sauce, place seared chicken on top, and heat together for another 5 minutes before serving.
