  • 1 large white onion, sliced
  • 6 cloves garlic, minced
  • 2 1/2 lbs. ripe tomatoes (roma, plum, or vine)
  • 1/2 cup fresh basil leaves (or 2 teaspoons dried)
  • 1/2 teaspoon dried oregano
  • 2 cups low-sodium vegetable broth
  • Salt and pepper, to taste
  • Vegan cream for serving

Instructions

  1. Prep the onion and garlic; cut tomatoes into quarters.
  2. In a heavy-bottomed pan, heat olive oil or water over medium heat. Sauté onions until translucent (about 7 minutes), then add garlic and cook for an additional minute.
  3. Add tomatoes, basil, oregano, salt, pepper, and vegetable broth to the pan.
  4. Bring to a boil; cover and simmer for 15 minutes to meld flavors.
  5. Allow to cool slightly before blending with an immersion blender until smooth.
  6. Adjust seasoning if necessary; stir in vegan cream before serving hot.
