  • 2 Tbsp avocado oil
  • 1/2 tsp sea salt, to taste
  • 1 tsp garlic powder
  • ½ tsp paprika
  • 1 cup yellow onion, chopped
  • 5 large cloves garlic, minced
  • 1 (16-oz) jar roasted red peppers, drained
  • 1 (15-oz) can full-fat coconut milk
  • 1 tsp sea salt, to taste
  • 1 cup cherry tomatoes (optional)
  • 5 ounces baby spinach (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix avocado oil, sea salt, garlic powder, and paprika. Coat salmon portions with this mixture.
  3. Heat a non-stick skillet over medium heat and cook salmon for about 4–5 minutes on each side until golden brown.
  4. Transfer salmon to a baking sheet.
  5. In the same skillet, sauté onions in avocado oil until translucent, then add minced garlic.
  6. Add roasted red peppers and coconut milk; let simmer for 5 minutes before blending until smooth.
  7. Return sauce to skillet over low heat and stir in optional cherry tomatoes and spinach.
  8. Serve salmon topped with creamy sauce.
