  • 1 lb boneless, skinless chicken breasts
  • 12 oz medium shell pasta
  • 1 cup heavy cream
  • 4 oz cream cheese
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese (divided)
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Cook the shell pasta in salted boiling water until al dente. Drain and reserve ½ cup of pasta water.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Add chicken seasoned with Cajun seasoning and cook until golden brown and fully cooked (about 5-6 minutes per side). Remove and set aside.
  3. In the same skillet, pour in heavy cream and stir in softened cream cheese until smooth.
  4. Add Parmesan cheese and mix until thickened. If too thick, adjust with reserved pasta water.
  5. Stir in cooked pasta to coat thoroughly. Add half of the mozzarella and mix until melted.
  6. Return chicken to the skillet or serve separately with pasta. Top with remaining mozzarella before serving.
