  • 2 large chicken breasts
  • 300g penne pasta
  • 200ml heavy cream
  • 500g baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1 tsp dried oregano
  • Juice of lemon
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 50g grated Parmesan
  • 2 tbsp chopped parsley
  • 1 tsp Italian seasoning
  • Fresh parsley for garnish

Instructions

  1. Marinate chicken breasts in olive oil, lemon juice, paprika, garlic powder, oregano, salt, and pepper for 15 minutes.
  2. Toss halved baby potatoes with olive oil, garlic powder, Italian seasoning, salt, and pepper on a baking sheet. Roast at 200°C (400°F) for 25-30 minutes until golden brown.
  3. Cook penne pasta in boiling salted water until al dente; drain.
  4. In a skillet, melt butter and sauté minced garlic until fragrant. Add heavy cream and grated Parmesan cheese to create a creamy sauce.
  5. Grill marinated chicken for about 5-6 minutes per side or until cooked through (internal temperature reaches 75°C/165°F). Slice into strips.
  6. Combine cooked pasta with the creamy sauce and chopped parsley; toss gently to coat.
  7. Serve topped with grilled chicken slices alongside crispy roasted potatoes and garnish with fresh parsley.
