  • 1 chicken breast
  • 1 tsp olive oil
  • Salt & pepper to taste
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tbsp Dijon mustard
  • 1 tsp lemon juice (optional)
  • 1 tsp dried thyme or parsley
  • 68 asparagus spears, trimmed
  • 1 tbsp olive oil
  • 1 cup baby potatoes, halved
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C). Toss halved baby potatoes with olive oil, garlic powder, salt, and pepper on a baking sheet. Roast for 25-30 minutes until golden brown.
  2. Season the chicken breast with salt and pepper. In a skillet over medium-high heat, sear the chicken for 4-5 minutes per side until cooked through. Remove and set aside.
  3. Pour chicken broth into the same skillet, add Dijon mustard, heavy cream, optional lemon juice, and herbs. Simmer for 3-5 minutes until slightly thickened. Return chicken to the pan.
  4. Sauté asparagus in another pan with olive oil and salt for 4-5 minutes until tender but still bright green.
  5. To serve, plate sautéed asparagus alongside the chicken topped with creamy sauce and roasted potatoes.
