Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts
  • 12 oz bowtie pasta
  • 4 tbsp unsalted butter
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Cajun seasoning
  • Garlic powder
  • Smoked paprika
  • Salt and black pepper
  • 1 tbsp olive oil
  • 4 cloves garlic, minced

Instructions

  1. Cook the bowtie pasta in salted boiling water until al dente (10-11 minutes). Drain and reserve some pasta water.
  2. In a bowl, season the chicken pieces with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
  3. Heat olive oil and 2 tbsp butter in a skillet over medium-high heat. Sear the seasoned chicken until golden brown and cooked through (about 8-9 minutes total). Add half of the minced garlic during the last minute.
  4. In the same skillet, melt remaining butter and add the rest of the garlic until fragrant (30 seconds). Pour in heavy cream and chicken broth; simmer gently before stirring in cream cheese until smooth.
  5. Gradually incorporate Velveeta, mozzarella, and Parmesan until melted and creamy.
  6. Toss the cooked pasta into the sauce; add reserved pasta water as needed to achieve desired consistency.
  7. Serve with seared garlic chicken bites on top and garnish with fresh herbs if desired.
