Ingredients

Scale
  • 2 lbs beef cubes (chuck or stew meat)
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 cups coconut milk

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté chopped onion until translucent (about 5 minutes). Add minced garlic and grated ginger; cook for another 2 minutes.
  2. Increase heat to medium-high, season beef cubes with salt and pepper, and brown in batches until all sides are golden (5-7 minutes per batch).
  3. Stir in curry powder, cumin, and coriander; cook for 2 minutes until fragrant.
  4. Pour in coconut milk and enough water or broth to cover the beef. Bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 hours until the beef is tender.

  6. Serve generous portions of curry over rice alongside crispy fries.
