  • 1 tbsp coconut oil
  • 1 large yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp chili flakes (optional)
  • 1 tbsp tomato paste
  • 1 (14 oz) can full-fat coconut milk

  1. Heat coconut oil in a large Dutch oven over medium heat. Add chopped onion and sauté until translucent (about 5 minutes). Stir in minced garlic and grated ginger until fragrant.
  2. Mix in curry powder, ground turmeric, ground coriander, and chili flakes (if using). Cook for about 2 minutes to bloom the spices.
  3. Add beef chunks and brown on all sides (approximately 5–7 minutes), stirring occasionally.
  4. Stir in tomato paste to deepen flavor.
  5. Pour in coconut milk and mix well; bring to a gentle simmer.
  6. Cover the pot slightly ajar and let simmer on low heat for about 1.5 to 2 hours until beef is tender enough to pull apart easily with a fork.
