  • 1/4 cup lime juice
  • 2 tbsp canola oil
  • 2 tsp olive oil
  • 1 tsp jalapeno (minced)
  • 1 tsp honey
  • 1 tsp salt
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cumin
  • 1/4 tsp coriander
  • 1/4 tsp cayenne pepper
  • 1/4 tsp ground black pepper
  • 2 tbsp red onion (chopped)
  • 1/2 cup frozen corn
  • 1/2 cup black beans (rinsed)
  • Soft taco flour tortillas
  • Fresh cilantro (chopped)
  • Avocado (chopped)
  • Avocado dressing
  • Lime wedges

Instructions

  1. Marinate the Chicken: In a Ziplock bag, combine half of the lime juice, canola oil, jalapeno, honey, salt, and spices. Add chicken breasts and refrigerate for at least 30 minutes.
  2. Cook the Chicken: Heat a non-stick skillet over medium-high heat. Cook chicken for about 5 minutes each side until done (internal temperature should reach 160°F). Let rest before slicing.
  3. Prepare the Filling: In another skillet, heat olive oil and sauté red onion until translucent. Add corn, black beans, salt, and pepper; cook through.
  4. Assemble Tacos: Fill tortillas with sliced chicken and filling; top with cilantro, avocado chunks, drizzle avocado dressing, and serve with lime wedges.
