  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • Salt and black pepper to taste
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 can (14.5 oz.) diced tomatoes, undrained
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 cups shredded mozzarella cheese
  • Fresh basil leaves, chopped for garnish

Instructions

  1. Cook the pasta according to package directions in salted boiling water until al dente. Drain and set aside.
  2. In a skillet over medium heat, heat olive oil and season chicken with salt and pepper. Cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from the skillet.
  3. In the same skillet, sauté minced garlic for about 30 seconds until fragrant.
  4. Add Italian seasoning and diced tomatoes to the skillet; stir to combine.
  5. Pour in chicken broth and heavy cream; bring mixture to a simmer.
  6. Return cooked pasta and chicken back into the skillet; toss everything together.
  7. Stir in shredded mozzarella until melted and combined.
  8. Garnish with fresh basil before serving.
