  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 green onions, finely chopped
  • 2 tbsp chopped cilantro
  • 1 tsp soy sauce
  • 1/2 tsp red chili flakes (optional)
  • 1/2 cup breadcrumbs
  • 1 egg
  • Salt and pepper, to taste
  • 1 tbsp vegetable oil (for frying)
  • For the coconut curry sauce: 1 tbsp vegetable oil, 2 garlic cloves, minced, 1 tbsp Thai red curry paste, 1 tsp turmeric powder, coconut milk

Instructions

  1. In a mixing bowl, combine ground chicken, garlic, ginger, green onions, cilantro, soy sauce, red chili flakes (if using), breadcrumbs, egg, salt, and pepper.
  2. Form small meatballs about 1 inch in diameter.
  3. Heat vegetable oil in a skillet over medium heat; fry meatballs until golden brown on all sides. Set aside.
  4. In the same skillet, sauté minced garlic until fragrant. Stir in Thai red curry paste and turmeric powder.
  5. Add coconut milk to the skillet and return meatballs to simmer for about 10 minutes.
  6. Serve hot over rice or noodles.
