  • 1 green onion
  • 4 tablespoons mayonnaise
  • 2 tablespoons creole mustard

Instructions

  1. Boil the eggs in a pot of water for about 11 minutes. Once cooked, transfer to an ice bath for quick cooling.
  2. Peel each egg and slice them in half lengthwise. Scoop out the yolks into a mixing bowl.
  3. Add chopped celery, green onion, mayonnaise, creole mustard, Cajun seasoning, and hot sauce to the yolks; mix until smooth.
  4. Spoon or pipe the filling back into the egg whites.
