Ingredients

  • Lasagna noodles (15-16)
  • Mashed butternut squash (1 cup)
  • Ricotta cheese (1¼ cups)
  • Grated Parmesan cheese (½ cup)
  • Shredded mozzarella cheese (1½ cups)
  • Egg (1)
  • Fresh sage (2 Tbsp + garnish)
  • Unsalted butter (4 Tbsp)
  • All-purpose flour (2 Tbsp)
  • Milk (2-3 cups)

Instructions

  1. Cook the lasagna noodles until al dente; drain and set aside.
  2. In a mixing bowl, combine butternut squash, ¾ cup ricotta, ½ cup Parmesan, egg, sage, salt, and pepper. Mix well.
  3. For the béchamel sauce, melt butter in a saucepan, whisk in flour until golden brown. Gradually add warm milk while whisking until thickened. Stir in remaining Parmesan and season.
  4. Preheat oven to 375°F. Spread half of the sauce in a baking dish.
  5. On each noodle, spread filling and sprinkle mozzarella before rolling up tightly. Place in the baking dish and top with remaining sauce and mozzarella.
  6. Bake for 30 minutes or until bubbling.
