  • 2 cups bread flour
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp active dry yeast
  • 1 Tbsp olive oil (plus extra for greasing)
  • 1/2 tsp squid ink
  • 1 cup warm water (110°F)
  • 4 oz button mushrooms
  • 2 Tbsp butter
  • 1/2 cup shallots (or red onion)
  • 45 cloves garlic
  • 2 Tbsp cooking apple juice
  • 1 tsp fresh thyme leaves
  • Salt and pepper to taste
  • 1 cup jarred pesto sauce
  • 1 cup Green Pesto Gouda cheese

Instructions

  1. Activate the yeast by combining warm water with yeast in a mixing bowl; let sit for about 5 minutes until frothy.
  2. In another bowl, whisk together bread flour, garlic powder, salt, and squid ink.
  3. Pour the yeast mixture into the dry ingredients along with olive oil; mix until a dough forms and knead on a floured surface for about 5–7 minutes.
  4. Grease a bowl with olive oil, place the dough inside, cover it, and let rise in a warm area until doubled in size (about an hour).
  5. Sauté shallots and garlic in butter over medium heat until soft; add mushrooms, apple juice, thyme, salt, and pepper; cook until mushrooms are tender.
  6. Punch down risen dough and divide into four pieces; roll each piece into flat circles.
  7. Spread pesto on each flatbread and top with sautéed mushroom mixture followed by cheese.
  8. Preheat oven to 425°F (220°C) and bake for about 10–12 minutes until golden brown.
  9. Drizzle warm flatbreads with balsamic vinegar mixed with honey before serving.
