  • 2 large lamb shanks
  • 1 large onion, chopped
  • 8 garlic cloves, minced
  • 3 stalks celery, chopped
  • 2 carrots, chopped
  • 4 cups chicken stock
  • 1 large bunch fresh rosemary
  • 1 small bunch thyme
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 3 bay leaves
  • 1 cup fresh plum tomatoes, chopped
  • Salt and pepper, to taste
  • Optional: teaspoon crushed red pepper flakes

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Season lamb shanks with salt and pepper, then sear them in a Dutch oven over medium-high heat until browned on all sides (about 4-5 minutes per side).
  3. Remove the shanks and add chopped onion, celery, carrots, and garlic to the pot. Sauté until softened (about 5-7 minutes).
  4. Return the lamb to the pot along with rosemary, thyme, smoked paprika, cumin, and fresh tomatoes.
  5. Pour in enough chicken stock to cover the lamb slightly and bring to a gentle simmer.
  6. Cover the Dutch oven with a lid and transfer it to the preheated oven. Braise for approximately 2-3 hours until the meat is tender.
  7. Let rest for about 10 minutes before serving.
