  • 2 pounds Yukon Gold potatoes
  • 4 yellow onions
  • 2 tablespoons olive oil
  • 4 tablespoons salted butter (or non-dairy butter)
  • 3/4 cup half & half (or full-fat coconut milk)
  • 1 teaspoon kosher salt
  • 1 cup grated parmesan cheese
  • Fresh herbs: chives, thyme, sage

Instructions

  1. Slice onions and caramelize in olive oil over medium heat for 40-50 minutes until golden brown.
  2. Meanwhile, wash and chop Yukon Gold potatoes. Boil in salted water for about 20 minutes.
  3. Drain potatoes, then mash with butter, half & half (or coconut milk), and kosher salt until smooth.
  4. Mix in half the caramelized onions and parmesan cheese.
  5. Serve topped with remaining onions and fresh herbs.
