  • Salt and freshly ground black pepper
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 6 garlic cloves, smashed
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tbsp tomato paste
  • 2 cups apple vinegar
  • 2 cups beef stock
  • Fresh thyme for garnishing

  1. Preheat your oven to 325°F (160°C).
  2. Season the lamb shanks with salt and pepper.
  3. In a Dutch oven, heat olive oil over medium-high heat and sear each shank until browned on all sides; set aside.
  4. Sauté onions, carrots, celery, and garlic in the same pot until softened.
  5. Stir in tomato paste and cook until fragrant.
  6. Deglaze with apple vinegar, scraping up any brown bits from the pot.
  7. Add beef stock and herbs; bring to a simmer.
  8. Return the lamb shanks to the pot, ensuring they are submerged in liquid.
  9. Cover and braise in the oven for about 2-3 hours until tender.
